I don’t get how the lettering size isn’t relevant but the overall pattern is

I think it’s because your verbal behavior is saying “Pepsi” only because the order of the letters and how close they are cause you to say “pepsi”. If all of the letters were super spread out or rearranged in a different way, it would not cause you to say “Pepsi” but maybe just each letter or a different phrase based on the order of the letters.
